The rating is not a formality
NIOSH studied roughly 17,000 food service workers across 226 school districts and issued the intervention group no-cost, five-star slip-resistant shoes. Slip-injury workers' compensation claims fell by 67% — from 3.54 slipping injuries per 10,000 months worked at baseline to 1.18 in the follow-up period. Workers over 55 were starting from a higher rate, 4.2 injuries per 10,000 worker-months against 2.3 for those under 55.

What to look for in a kitchen shoe
1. A rating against a named test, not the word “non-slip.” ASTM F3445 requires a coefficient of friction of at least 0.40 wet and dry and 0.33 oily-wet. That oily-wet threshold is the one that matters in food service, and it is lower than the others for a reason — grease and water together is the hardest surface there is. The half of this nobody buys
Slip resistance wears out, and it goes long before the shoe looks finished. The NIOSH figures came from new shoes; a rounded-off outsole with closed siping is not the shoe that was tested. If you have started slipping in footwear you have had a year, replace it rather than re-reading the rating.
The second half is socks and drying. A kitchen shoe is wet inside by hour four, and wet feet blister and fall apart faster than dry ones. A moisture-wicking sock and a convection dryer overnight do more for the life of the shoe than anything you can buy on top of it — work boot care and cleaning has the routine.
